Once per year, Paige tackles a truly daunting cake... for my birthday. Two years in a row makes it a tradition. Last year's cake was a monstrous three layer, yellow pudding cake with chocolate butter cream frosting. It weighed about 6lbs and even though we took it to Terra to share with Robin, Sharine, Carolyn, Mike, Eric and Mallory (Dani had to leave early), we didn't even eat a third of it. I think Eric took the rest home to his mom and grandmother.
This year, Paige made me a Pretty, Pretty Princess Cake. I don't know why. Could be that strawberries are in season and she was inspired. Or it could be that I'm a princess.
As you can see, the strawberry cake is layered and covered with a strawberry cream cheese frosting, which is like eating a super moist (to the point of dense, when chilled) strawberry cake and then basically spreading cream cheese, to which has been added mounds of berries and powdered sugar. I just had a breakfast piece right now. We're on our third day and we're not quite half way done. And there's a third layer in the fridge that sanity prevented her from putting on the cake as well... Yes, it was to be a three layer cake.
I think our compost pile will get to celebrate my birthday after this weekend.
